For example, saying that an espresso tasted good does not provide much information for preparing it again. Recording that an 18g dose produced 36g of espresso in 28 seconds gives you a recipe that can be repeated, compared and adjusted.

The same principle applies to filter coffee. A recipe using 20g of coffee and 320g of water can be reproduced more reliably than one made using an approximate scoop of coffee and an unmeasured pour.

Why weigh coffee instead of measuring by volume?

Coffee beans and ground coffee can vary considerably in volume.

Different coffees have different bean sizes, densities and roast levels. A tablespoon of one coffee may therefore contain a different weight from the same tablespoon of another coffee.

Espresso is also difficult to measure consistently by volume because the amount of crema can vary. Two shots containing the same weight of liquid may appear to have different volumes depending on the coffee, its age and the extraction.

Measuring by weight provides a more stable basis for comparison. When the dose and yield remain reasonably consistent, you can more clearly assess the effect of adjusting grind size, brew ratio or another variable.

This does not mean that every displayed tenth of a gram must be followed rigidly. The main benefit is knowing what you changed and having a stable reference for the next brew.

How to use a coffee scale for espresso

A scale is particularly useful when dialling in espresso because relatively small changes in dose, beverage yield and grind size can noticeably affect the extraction.

A typical espresso workflow might look like this:

  1. Place a dosing cup or container on the scale.
  2. Tare the scale so that it reads zero.
  3. Weigh the desired quantity of whole coffee beans.
  4. Grind the coffee.
  5. Transfer the grounds into the portafilter.
  6. Distribute and tamp the coffee consistently.
  7. Place the cup and scale on the espresso machine’s drip tray.
  8. Check that the cup and scale are not touching the machine or another object.
  9. Tare the scale again.
  10. Start the extraction and timer.
  11. Stop the shot as it approaches the intended beverage weight.
  12. Taste the espresso and adjust the recipe where necessary.

For a consistent machine-side measurement, start the timer when you activate the brew cycle or pre-infusion. Some scales instead start automatically when the first espresso reaches the cup. Either convention can provide useful information when applied consistently, but times recorded using different starting points should not be compared directly.

Depending on the espresso machine, coffee may continue dripping after the pump is stopped. You may therefore need to stop the extraction slightly before the intended final weight. For example, you might stop the pump at 34–35g when aiming for a final yield of 36g. Observe how your own machine behaves rather than applying a fixed offset to every setup.

A starting espresso recipe

A conventional starting recipe might use:

  • 18g coffee dose;
  • 36g espresso yield;
  • approximately 25–30 seconds from activation of the brew cycle, depending on the machine and pre-infusion; and
  • a brew ratio of 1:2.

This is only a starting point. Some coffees may taste better at a shorter or longer ratio, and shot time should be treated as diagnostic information rather than an absolute measure of quality.

The final decision should be based on taste.

Using a scale while dialling in espresso

When dialling in a coffee, keep the dose reasonably consistent and choose an intended beverage yield. You can then adjust the grind setting to influence how quickly the espresso reaches that yield:

  • If the espresso reaches the target weight much too quickly, the grind may be too coarse.

  • If it flows very slowly or barely passes through the coffee, the grind may be too fine.

Once the extraction is within a workable range, taste should guide the remaining adjustments.

In espresso brewing, a scale usually measures the beverage flowing into the cup. In pour-over brewing, it is generally used to measure the water being poured onto the coffee.

A basic pour-over workflow might look like this:

  1. Place the brewer and serving vessel on the scale.
  2. Insert and rinse the filter if required.
  3. Add the ground coffee.
  4. Tare the scale.
  5. Start the timer as the first water is added.

A basic immersion workflow might involve:

  3. Tare the scale.
  4. Start the timer as the brewing water is added.
  5. Stop pouring at the intended water weight.
  6. Allow the coffee to steep for the intended period.

For example, a French press recipe might use 20g of coffee and 300g of water, producing a coffee-to-water ratio of 1:15.

Understanding coffee brew ratios

A brew ratio describes the relationship between the amount of dry coffee and the amount of water used or beverage produced.

For filter and immersion coffee, the ratio usually compares the dry coffee dose with the amount of brewing water added. A recipe using 20g of coffee and 320g of water has a ratio of 1:16.

How a coffee scale helps with troubleshooting

Common mistakes when using a coffee scale

What should you look for in a coffee scale?

A normal kitchen scale can be suitable for some brewing tasks, particularly larger filter-coffee recipes. A purpose-designed coffee scale will generally be better suited to espresso and manual brewing because of its resolution, responsiveness, dimensions and timer.
