Geometry affects how the burrs break down coffee and the resulting particle distribution. It is generally the more important burr-level choice for how your coffee presents in the cup.
Coating changes properties of the burr surface, particularly hardness and resistance to wear. It is primarily a durability choice rather than a different flavour-profile choice.
Once you separate those two questions, choosing burrs for your DF54 becomes much simpler.

Quick recommendation: If you mainly pull espresso, or regularly switch between espresso and filter, choose Espresso (Multipurpose). If filter and pour-over are your main focus, choose Brew. Choose Red Titanium if greater wear resistance and long-term durability matter to you; otherwise uncoated stainless steel is already a durable and capable option.

Espresso (Multipurpose) is the most versatile option for most DF54 owners. It is designed primarily around espresso-fine grinding while retaining enough flexibility for other brewing methods.
Brew is designed around coarser, filter-focused grinding, including pour-over, batch brew, drip coffee and French press. Compared with the Espresso/Multipurpose geometry, it is intended for users seeking a more filter-focused grind profile, with greater emphasis on clarity and flavour separation.

Step 2: Choose your coating
Both geometries are available in uncoated stainless steel or Red Titanium-coated stainless steel.
Our Red Titanium burrs use an AlTiN (aluminium titanium nitride) coating designed to increase surface hardness and resistance to wear. The coating does not change the underlying cutting geometry, so the Espresso/Multipurpose and Brew options remain fundamentally different geometries regardless of which surface treatment you choose.
For most home users, standard stainless steel burrs can already provide a long service life. Red Titanium therefore makes the most sense for owners who grind frequently, expect high total usage over the life of the burrs, or simply value the additional wear resistance of the coated surface.
It isn't required to get good coffee from the DF54.

Already own a DF54 with the stock burrs?
You probably don't need to change them simply because alternative burr sets are available.
The standard DF54 burrs are already capable across espresso and filter brewing, so there is no need to replace them simply because other burr options exist. Consider changing them if:
- you specifically want a different geometry — for example, you've shifted your focus primarily to filter coffee
- you want the additional wear resistance of Red Titanium
- your existing burrs eventually require replacement
If your main goal is to change how the grinder performs or how your coffee presents in the cup, start by considering geometry rather than coating.
Replacing an otherwise suitable uncoated burr with the same underlying geometry in Red Titanium should primarily be viewed as a durability upgrade.
Buying a new DF54? Here's what you can configure
The DF54 grinder listing is available with either standard stainless steel or Red Titanium-coated burrs, depending on the currently available grinder version.
Brew geometry is not currently offered as a selectable option on the grinder listing itself.
If you specifically want a filter-focused Brew geometry, you can purchase a separate 54mm burr set and install it in your DF54.
Compatibility
These burrs are designed for the DF54.
A nominal 54mm diameter does not guarantee that a burr set will fit every grinder using “54mm” burrs. Mounting-hole pattern, burr thickness, cutting orientation and available burr-chamber clearance can differ between grinder designs.

After installing new burrs
After changing burrs, your grinder's zero point and corresponding dial positions may change.
It's therefore worth checking the zero point again rather than assuming your previous grind settings will correspond to exactly the same burr gap.

Do I need to change my grind settings after switching burrs?
Usually, you should expect to re-dial in.
A burr change can alter the grinder's zero point and the dial position required for a particular brew. Changing to a different burr geometry can also change grinding characteristics. Check your zero point after installation and treat previous dial numbers as a reference rather than assuming they will remain identical.
Will any 54mm burr fit the DF54?
No. Diameter alone does not guarantee compatibility.
Mounting-hole pattern, burr thickness, cutting orientation and chamber clearance can differ between nominally 54mm burr platforms. Use burrs specifically listed as compatible with the DF54 or confirm fitment before installation.
