Shop for aftermarket coffee grinder burrs for more than five minutes and you'll run into a wall of names: Red Titanium, AlTiN, Red Speed, TiAlCN, Silver Knight, DLC, HU, MP, Lab Sweet, Brew, Espresso.
It's easy to assume all of these terms are answering the same question: how will this burr taste? They're not.
Some describe the geometry of the burr, the shape of the cutting surfaces. Others describe a coating applied over those surfaces. Others still refer to the burr's material or diameter.
Understanding which is which makes choosing replacement or upgrade flat burrs considerably easier — and helps avoid paying more for an upgrade that doesn't actually address what you want to change.
Two different questions hiding in one burr listing
Every burr set is really answering several separate questions at once, but the two most important are:
- What shape are the cutting surfaces? This is burr geometry.
- What are those cutting surfaces made from or coated with? This is burr material and coating.
A useful way to remember the distinction is:
Geometry decides how the burr cuts your coffee. Coating mainly helps that cutting surface resist wear over time.

A burr name is often several specifications combined
One reason this gets confusing is that a product name can combine several completely different characteristics.
Take a name such as SSP 64mm Lab Sweet V3 Red Speed:
- SSP is the manufacturer.
- 64mm is the nominal burr diameter.
- Lab Sweet V3 describes the burr geometry.
- Red Speed describes the coating.
If you're trying to predict how that burr will differ in the cup from another SSP set, Lab Sweet V3 is usually the more important part of the name to understand. If you're comparing durability or surface treatments, Red Speed becomes relevant.

The order to actually decide in
It's tempting to shop by coating because names such as Red Titanium, Red Speed and Silver Knight sound like performance tiers. In practice, it makes more sense to work through the decision in this order:
- What do you brew? Mostly espresso, mostly filter, or a mixture of both?
- Which burr platform does your grinder use? For example, 54mm burrs for the DF54 platform or 64mm burrs for grinders such as the DF64 platform.
- Which geometry matches the cup profile you're looking for? More body and texture, more clarity and flavour separation, or a balance between the two?
- Which coating or surface treatment do you want? Once the geometry is settled, consider whether additional wear resistance or other surface properties matter for your use.
- Compare price and expected longevity.
Coating is deliberately later in the decision. It can be a worthwhile upgrade, but it isn't a substitute for choosing the right geometry.
What burr geometry actually does
Burr geometry is the shape and arrangement of the cutting surfaces that break coffee beans down as they pass through the grinder.
Different geometries produce different distributions of particle sizes — including different proportions of fines, particles clustered around the target grind size, and larger fragments. Those differences influence how water moves through the coffee and how extraction occurs, which can change characteristics such as clarity, body, texture and flavour separation.
This is why two burr sets using the same coating can still produce noticeably different cups if their geometries are different.
The same principle applies across the burr platforms we stock:

What burr coating actually does
A burr coating is a thin, hard surface treatment applied over the underlying burr material. Across our range you'll encounter coatings including:
- AlTiN — used on our 54mm Red Titanium burrs and 64mm Red Titanium burrs.
- TiAlCN — used by SSP for its Red Speed coating.
- DLC — diamond-like carbon, used on SSP Silver Knight burrs and some other coated burr sets.
These coatings differ in their material properties, but the main reason for applying them to coffee grinder burrs is to improve characteristics such as surface hardness and resistance to wear. Some coatings can also have different frictional and surface characteristics.
Importantly, applying a coating does not change the fundamental cutting geometry underneath it.
Two burr sets with different geometries can therefore produce substantially different grind distributions even when they use the same coating. With the same geometry, changing coating is usually a much smaller variable because the underlying cutting design remains substantially the same.

Does a coating make a burr taste better?
Not inherently.
A premium coating doesn't turn one geometry into a high-clarity, high-body or filter-focused geometry. Those characteristics are primarily associated with the design of the cutting surfaces and the particle distribution they produce.
That doesn't mean a coating has no effect on how a burr performs. Surface properties and wear can matter, particularly over long periods of use. But if your main goal is to change how your coffee presents in the cup, geometry is normally the more consequential variable to consider first.
A useful question before spending more on a coated burr set is:
Am I buying this upgrade because I want a different cup profile, or because I want greater wear resistance?
If the answer is cup profile, start with geometry. If the answer is longevity, coating becomes much more relevant.

What about 54mm vs 64mm burrs?
Burr diameter matters, but it isn't a flavour profile in itself.
A larger burr platform can provide greater available cutting area and potential throughput, and different platforms give manufacturers room to develop different cutting geometries. The 64mm aftermarket, for example, currently offers a particularly wide range of specialised burr designs.
But 64mm does not automatically mean better-tasting coffee than 54mm. A well-matched 54mm geometry can be a better choice for a particular brew method or cup preference than a 64mm geometry designed for something else.

Do I have to choose geometry and coating at the same time?
No. They're best thought of as separate decisions. Start by choosing a geometry suited to your brew method and preferred cup profile. Then consider whether a particular coating or surface treatment offers benefits that are worthwhile for your usage.
Is a coated burr overkill for home use?
For many home users, an uncoated steel burr can already provide a very long service life. A wear-resistant coating can make sense if you grind frequently, intend to keep the grinder for many years or simply prefer a more wear-resistant option, but it isn't required to make excellent coffee.
