SSP 64mm Lab Sweet – V2 & V3
These are premium upgrade burr sets. The goal isn’t necessarily to “fix” a stock grinder, but to target a particular flavour direction — whether that means more body, greater clarity, stronger flavour separation, or a balance of sweetness and structure.
Quick comparison: SSP 64mm burr profiles
The most important distinction when choosing SSP burrs is the burr geometry. Geometry has the greatest influence on grind distribution and cup characteristics, while coatings such as Red Speed and Silver Knight are primarily about durability and surface properties.
| Burr profile | Best suited to | Cup direction | Choose if... |
|---|---|---|---|
| Espresso / HU | Espresso-first brewing, traditional espresso and milk drinks | Fuller body, texture and balanced sweetness | You prioritise espresso body, structure and a relatively forgiving dial-in |
| Multipurpose / MP | Filter and modern espresso, particularly light to medium roasts | High clarity, brightness and flavour separation | You prioritise clean, distinct flavour notes across espresso and filter |
| Lab Sweet V2 | Filter, pour-over and sweetness-focused brewing | Balanced sweetness, body and clarity | Filter is your main brew method and you want a balanced, sweetness-forward cup rather than maximum flavour separation |
| Lab Sweet V3 | Espresso and mixed espresso/filter brewing | Lab Sweet sweetness and clarity with greater emphasis on espresso performance | You want a balanced burr for both espresso and filter rather than maximum clarity alone |
If you’re still deciding, browse our SSP burrs collection or 64mm collection.
Note: “64mm” refers to the nominal burr diameter. Burr diameter alone does not guarantee compatibility, so always check your grinder’s mounting arrangement before ordering.
Who is SSP?
SSP Grinding Solutions is a South Korean precision manufacturer well known in specialty coffee for producing high-performance flat burr sets in a range of geometries and coatings.
Different SSP burr designs are intended to emphasise different characteristics in the cup. Depending on the geometry, this can include greater body and texture, higher clarity and flavour separation, or a balance of sweetness and structure.
How burr geometry changes taste
Burr geometry influences the distribution of coffee particles produced during grinding — including the balance between relatively uniform particles, larger particles and fines. This affects extraction behaviour and, in turn, how the coffee tastes and feels.
In practical terms:
- Clarity and separation: cleaner flavour presentation with individual tasting notes easier to distinguish.
- Body and texture: heavier mouthfeel and more traditional espresso structure.
- Sweetness and balance: a rounded cup that aims to retain clarity while preserving body and perceived sweetness.
No geometry is objectively “better”. The ideal burr depends on your preferred roast level, brew method and flavour priorities.
SSP 64mm Espresso / HU burrs
SSP’s High Uniformity (HU) geometry is primarily designed around espresso. It is a strong option for drinkers who value body, texture, sweetness and traditional espresso structure rather than pursuing maximum flavour separation.
- Best for: espresso-first workflows, traditional espresso and milk drinks
- Cup direction: fuller body, texture and balanced flavour
- Dial-in: generally more forgiving than highly clarity-focused geometries
- Roast range: suitable across a broad range of espresso roast styles
HU is particularly appealing if espresso is your priority and you want a premium burr without sacrificing the body and tactile qualities associated with more traditional espresso.

SSP 64mm Multipurpose / MP burrs
SSP’s Multipurpose (MP) geometry takes a different approach. It is designed around a clarity-oriented grind profile that can produce strong flavour separation across filter coffee and modern espresso.
- Best for: filter, pour-over and modern espresso
- Cup direction: high clarity, brightness and distinct flavour separation
- Roast range: particularly well suited to light and medium roasts
- Trade-off: typically less emphasis on heavy espresso body than HU
MP is a strong choice if you regularly alternate between espresso and filter and enjoy coffees where individual flavour notes are clearly distinguishable.

SSP 64mm Lab Sweet burrs
SSP’s Lab Sweet burrs are designed to balance some of the body associated with traditional espresso burrs with the clarity and flavour separation sought from modern burr geometries.
The general goal is a balanced cup with strong perceived sweetness, good flavour clarity and enough body and structure to remain versatile across different brew methods.
Lab Sweet V2 vs V3
V2 and V3 share the same overall Lab Sweet philosophy, but they are optimised somewhat differently. V3 is not simply an upgrade over V2 — the better choice depends primarily on how you intend to use the burrs.
| Version | Profile | Best suited to | Choose if... |
|---|---|---|---|
| Lab Sweet V2 | Balanced sweetness, body and clarity | Filter and pour-over | Filter is your main brew method or you prefer a balanced, sweetness-forward presentation |
| Lab Sweet V3 | Lab Sweet character with greater emphasis on espresso extraction | Espresso and mixed brewing | You regularly brew espresso but still want strong filter performance from the same burr set |
Differences between burrs can be influenced by grinder alignment, coffee, roast level and brewing technique. Straight espresso and filter coffee will also tend to reveal differences more clearly than heavily milk-based drinks.

Silver Knight vs Red Speed coatings
When choosing Lab Sweet burrs, you may also encounter different coating options. It is useful to separate this choice from burr geometry: geometry has the greater influence on cup profile, while coating is primarily about durability, friction and surface characteristics.
| Coating | Type | Main characteristic | Why choose it |
|---|---|---|---|
| Silver Knight | DLC (diamond-like carbon) | Low-friction, wear-resistant coating | Excellent durability and low-friction performance for general espresso and filter use |
| Red Speed | TiAlCN | High wear resistance and long service life | Choose when maximum wear resistance and long-term durability are priorities |
For most home users, either coating can provide excellent longevity. The geometry — HU, MP, Lab Sweet V2 or Lab Sweet V3 — should generally be the first decision.
Quick picks: which SSP burr suits your brew style?
- Espresso and milk drinks: choose Espresso / HU if body, texture and traditional espresso structure are your priorities.
- Modern espresso with light roasts: consider MP if you prioritise clarity and flavour separation, or Lab Sweet V3 if you want more balance between clarity, sweetness and structure.
- Filter and pour-over: Lab Sweet V2 is a strong choice for sweetness-forward clarity and balance, while MP is better suited to drinkers seeking maximum separation and a cleaner, more clarity-focused presentation.
- One burr set for espresso + filter, clarity-first: choose MP if distinct flavour separation and brightness are your main priorities.
- One burr set for espresso + filter, balanced: choose Lab Sweet V3 if you want sweetness and body alongside good clarity.

Compatibility: DF64, DF64V and other 64mm grinders
These are 64mm flat burr sets intended for grinders with compatible 64mm burr mounting systems.
Important: burr diameter alone does not guarantee compatibility. Before ordering, check your grinder’s:
- burr diameter
- mounting-hole pattern
- rotation direction
- burr carrier and available clearance
SSP 64mm burrs are commonly used with compatible grinders including:
They are also used in a range of other compatible 64mm flat-burr grinders, but fitment should always be confirmed for your specific model.

Installation: alignment matters
High-performance burrs work best when they are installed carefully and the burr carriers are properly aligned. Even relatively small alignment differences can affect grind distribution and reduce the benefits you’re trying to achieve with an upgraded burr set.
- Expect to re-zero your grinder after changing burrs.
- Re-dial your recipes rather than relying on your previous grind-setting numbers.
- Shot times and grind settings can change even if the coffee and brewing recipe remain the same.
- Make sure the burrs sit cleanly and evenly against their mounting surfaces.
- If you hear unexpected rubbing or chirping after installation, stop the grinder and check the installation before continuing.
Do SSP burrs need seasoning?
Burr behaviour can change slightly as the cutting surfaces bed in. You can use SSP burrs immediately, and there is no need to season them before making good coffee.
A few kilograms of coffee is generally a reasonable initial break-in period for coated SSP burrs, although grind behaviour can continue to settle gradually with further use. For many home users, the easiest approach is simply to let this happen naturally through normal brewing.
If you want to accelerate the process, inexpensive coffee can be used, but deliberately running large quantities of coffee through the grinder is not essential.
Common questions about SSP 64mm burrs
Will SSP 64mm burrs fit my DF64 or DF64V?
SSP 64mm burrs are commonly used with compatible DF64 and DF64V grinders. However, burr diameter alone does not guarantee compatibility. Mounting-hole pattern, rotation direction and burr-carrier clearance also need to match. If you’re unsure about your exact model, contact us and we’ll help confirm fitment.
What is the difference between SSP HU and MP burrs?
HU (High Uniformity) is primarily an espresso-focused geometry that places greater emphasis on body, texture and traditional espresso structure. MP (Multipurpose) is more clarity-oriented and is particularly well suited to filter coffee and modern espresso where flavour separation is a priority.
What is the difference between Lab Sweet V2 and V3?
Both versions aim for the balanced sweetness, clarity and body associated with the Lab Sweet design. V2 is particularly well suited to filter-focused brewing, while V3 places greater emphasis on espresso extraction and mixed espresso/filter use. V3 is not simply an upgrade over V2 — the better choice depends on how you brew.
What is the difference between Silver Knight and Red Speed coatings?
Silver Knight is a DLC (diamond-like carbon) coating designed to provide a low-friction, wear-resistant surface. Red Speed is a TiAlCN coating designed for high wear resistance and long service life. For most users, burr geometry should be the primary consideration, because geometry has a greater influence on cup characteristics than coating choice.
Does burr coating change the flavour of coffee?
The main flavour differences between SSP burrs come from their geometry. Coatings are primarily used to improve wear resistance, durability and surface characteristics rather than to create a particular flavour profile.
Will SSP burrs change my grind setting numbers?
Yes. It is normal for your grind-setting reference to change after installing a different burr set. Plan to re-zero your grinder and dial in again from scratch rather than relying on the settings used with your previous burrs.
Are SSP burrs better than stock burrs?
It is often more useful to think of SSP burrs as different flavour tools rather than simply “better” burrs. Many stock 64mm burrs already produce excellent coffee. SSP burrs are most useful when you are happy with your grinder but want to target a different flavour direction — such as more body, greater clarity or a different balance of sweetness and structure.
Which SSP 64mm burr should I choose?
As a starting point, choose Espresso/HU if espresso body and texture are your priorities; MP if you favour clarity and flavour separation across filter and modern espresso; Lab Sweet V2 for balanced, sweetness-focused filter brewing; or Lab Sweet V3 if you want a balanced option for espresso and filter. If you tell us what coffee you drink and how you brew it, we can help recommend the most suitable option.
Do SSP burrs need to be seasoned?
You can use SSP burrs immediately. Their behaviour may change slightly as the cutting surfaces bed in over the first few kilograms of coffee, but there is no requirement to season them before making good coffee. Most home users can simply allow this process to happen naturally through normal use.
Key takeaways
- Espresso / HU: choose it for espresso-first brewing, body, texture and traditional structure.
- Multipurpose / MP: choose it for high clarity, brightness and flavour separation across filter and modern espresso.
- Lab Sweet V2: choose it for balanced sweetness and clarity with a stronger filter focus.

Hello, I recently purchased a mazzer Philos changing from a mazzer major V, I have the I189D burrs installed in the Philos as I wanted to get close to the original major V flavor. I find the philos to be 1 dimensional flavor and thin. What burr do you recomend as a replacement, thanks for your advice
